Two new easy zucchini side dishes

💛 💚 Summer Squash Dispatch

The trick to enjoying summer squash of any kind is catching them while they’re young. If you’re growing zucchini, patty pan, ball squash – any kind – check the plants both in the morning and the evening. Those little guys grow fast! If you’re buying at market, choose the smallest you can find.

The reasons? Smaller squashes have more flesh and less seeds; they’ll be denser and firmer; and they have a higher skin-to-flesh ratio. Skin is good! It helps hold pieces of squash together when cooking and provides texture.

Harvest young or choose small squash at the market.
