Lemony Ricotta Panna Cotta (aka Panda Cotta) with Strawberry Compote

🥄 Dessert with friends

Well, I have found my new summer entertaining dessert. It’s easy to make, can (and should) be made ahead, and has a luscious texture and cool lemony flavor. Plus, I love it! The funny thing is, when Abby Dodge first suggested the idea of this recipe for her Baking Together column, spellcheck changed “panna cotta” to “panda cotta” in the subject line of her email. We liked that so much that we’ve been calling it panda cotta ever since.
