Butternut Squash Soup with Curry Spices, Lime, and Coconut Milk

🚗 Joy Ride

I was only off-Island for a week, but I missed our farm stands terribly. First thing Monday morning, I hopped in my buggy and did an up-Island loop, from Grey Barn to Beetlebung to North Tabor and back down to Ghost Island. I had to skip Mermaid and I drove past one of my favorite little outposts, Whippoorwill Farm, because I saw their sign saying, “Last Day for the Season!” Boo-hoo to that. But I found all kinds of interesting and delicious things along the way and came home to spread my loot out on my kitchen counter.

Don’t be fooled by the end of summer; fall farm-stand shopping is awesome.

I considered making a quick soup with the chicken bone broth I got at Grey Barn by adding udon noodles, a lot of fresh ginger, a few slivered Japanese turnips from Beetlebung, and some slivered collards and scallions from Ghost Island.
